Craf Roasters BBQ offers a taste of Texas in KL

KUALA LUMPUR: “Always listen to your wife”. That’s something Raymond Soosi learnt first-hand.

Raymond and his wife, April Marie Ray, are the co-founders of Craf Roasters BBQ, a restaurant serving mouth-watering Texas-style food.

Located at the Kuala Lumpur Performing Arts Centre, it’s a cosy spot overlooking a lake in Sentul Park.

But the road to barbecue bliss wasn’t a straightforward one. Before launching their restaurant, the duo ran Craf Coffee Roasters, serving coffee, cakes and pasta.

However, like many small businesses, they struggled to keep afloat during the pandemic – until April had an idea: why not serve barbecue?

Raymond, who had been smoking meats at home as a hobby, wisely took her suggestion and it was a game-changer.

On the very first day, they impressed an American family – from Texas, no less – the US state famed for its barbecue.

Word soon spread about their delicious meats and soon, they commissioned a custom-built offset smoker. Today, their menu features a hearty spread of smoked lamb, beef, chicken, sausages and more.

“We call ourselves ‘Craf’ because everything is handcrafted – from our coffee, cakes, pastries, meats and sauces. Except for the milk – we haven’t bought a cow yet!” Raymond, 43, said with a grin.

He even built the wooden tables in the restaurant himself, each one perched on vintage sewing machine legs.

Meanwhile, coffee is April’s domain, and she personally roasts the beans in-house.

“Our house blend is a mixture of beans from Brazil, Guatemala and Indonesia,” explained April, 39.

She also bakes the cakes, including a decadent chocolate cake which she reverse-engineered from her mother’s original recipe.

If you’re a fan of the series “Young Sheldon”, you’ll probably remember Meemaw’s legendary brisket that her son in-law George Cooper would’ve traded his Texan soul for. Well, he might just sigh in delight after tasting the smoked beef brisket here.

Smoked “low and slow, Texas-style”, as Raymond puts it, the brisket is cooked over rambutan tree wood for 12 to 14 hours, infusing the meat with a subtle sweetness. It’s fork-tender and rich with flavour.

Not a fan of beef? The Alabama BBQ Platter is a mouthwatering alternative, generously portioned for three to four people. It features smoked pulled lamb, smoked half chicken, lamb meatloaf as well as smoked chicken and lamb sausages.

The platter also comes with BBQ baked beans, coleslaw, roasted potatoes, buttermilk cornbread muffin as well as pickled onions and cucumbers.

The smoked pulled lamb is out of this world. Smoked for 12 to 14 hours over rambutan tree wood, the meat is tender and melts in your mouth. The chicken gets the same smoky treatment for two to three hours, resulting in juicy meat that’s finger-licking good!

Rounding out the platter are the moist, flavourful meatloaf and plump, tender sausages. All their meats, Raymond shared, come from a halal supplier.

Another highlight is the buttermilk cornbread muffins – fluffy, and not too sweet. Truly addictive!

The smoked pulled lamb fried rice, Raymond shared, is a crowd favourite – and it’s no surprise. Packed with tender, smoky lamb full of wok hei, it’s flavourful without being too greasy. Even Uncle Roger might be tempted to say, “Fuiyoh!”.

Also, don’t miss The Shazz – an iced latte named after Raymond’s close friend. This beverage is topped with vanilla ice cream and drizzled with caramel syrup made in-house. Other coffee options include espresso, latte, cappuccino, affogato and more.
